Hopefully it's pretty self explanatory but just in case... whichever "fulfillment month" you purchase from will be the month that your beef will be delivered to you.If you try to buy a "November Fulfillment" but they are sold out just scroll down to "December Fulfillment" and purchase from there. Nothing is different about the beef itself, we are just butchering in a staggered timeline to make it a little easier on our end.
